Award-Winning Cortador José Manuel Hidalgo and special menu inspired by Michelin Two-star restaurant – Moments launches in New Kowloon’s popular Spanish dining destination this summer
(Hong Kong, 12 May 2017) – This summer, Rustico, authentic Spanish tapas bar helmed by seasoned chef Carlos Salvador Asensio, will be celebrating its 3rd Anniversary with a range of world class dining experiences. From 19 to 25 May, award-winning cortador José Manuel Hidalgo will take on tenure at the restaurant for a limited time, showcasing his master craft in ham slicing; followed by the launch of a collaborative menu with Silco, and a 6-course menu inspired by the Michelin two-star restaurant, Moments in Barcelona. Located in D2 Place One in Lai Chi Kok – New Kowloon’s stylish dining destination Rustico presents an unrivalled dining experience with a taste of Barcelona, one of the most celebrated food capitals of the world.
From 19 to 25 May 2017, Rustico will be inviting the champion cortador José Manuel Hidalgo to showcase his award-winning cortador craftsmanship for jamón ibérico, and guide diners through the tasting of the premium ham. With 18 years under his belt as a ham slicer, José boasts an impressive total of 48 prizes in Ham Carving National Competitions, including seventeen National Championship awards and nine “Best Creative Dish” awards. He is also recognised on an international scale, winning Master ham carver awards in various countries such as Europe, the US, and China. During Jose’s tenure, artisan meat from Garimori, S.L., a family-run company from Guijuelo, will be served.
To enhance the celebratory spirit, Rustico will also be rolling out a special summer menu highlighting seasonal ingredients, such as the white asparagus from 19 to 25 May in partnership with Silco, Hong Kong’s leading fine food supply specialist for over 60 years.
Highlights of the menu include White Asparagus on Salad with Iberian Ham (HK$148), Fresh Pineapple Carpaccio with Iberian Ham (HK$218), “Gazpacho” Creamy Cold Tomato Soup Spanish Style with Iberian Ham (HK$78), Broken Egg with Spanish Artichoke Chips and Iberian Ham (HK$128), “Serranito de Ibérico” Spanish Crystal Bread with Duroc Pork Loin, Green Peppers and Iberian Ham (HK$148), Crispy Baby Shrimp Omelette Typical from South of Spain (HK$68), and Prawns and Octopus Leg Casserole in Chili Garlic Olive Oil (HK$188). All the jamón used in the menu are 36-month cured Iberian Ham by Garimori, the leading breeder and exporter of Iberian ham from prized free-range pigs worldwide.
From 27 to 29 June, guests will be able to experience an indulgent menu inspired by Michelin two-star restaurant, Moments in Barcelona, where Chef Carlos Salvador Asensio was trained under Carme Ruscadella- renowned Spanish Catalan chef. Known for its creative, fresh, and healthy cuisine inspired by Catalan culture, the “Taste of Moments” 6-course tasting dinner menu focuses on a unique and contemporary presentation. Priced HK$880, the menu takes diners through the finest neo-Catalan gastronomic experiences, and bringing a hint of fine dining to the authentic tapas style restaurant.
The culinary adventure commences with a quartet of appetizers featuring Gilt Ceviche and Tiger’s Milk, Coca “Vendima”, Whole Wheat Bread Topped with Garlic, Parmesan and Pine Nut Gelatine, and Dried Fruits’ Seed Sticks with Japanese Miso.
The first course of the menu starts with a light yet fulfilling “Ajo Blanco” Garlic-Hazelnut Soup with Smoked Eel and Figs, followed by Manzanilla Wine Marinated Raw Tiger Prawn served with Cherrie Gelatine, Mustard and Black Olive Paste that marries the taste of the ocean with earthiness. The third course features a refreshing Spanish Sea Cucumber, Potato Puree and Fresh Zucchini, Parsley-Pesto. This is followed by a savoury and sweet French Seabass, Fresh Lettuce, Raisins and Cashew Nuts, Mango and Japanese Curry Sauce. For the final course of the menu, diners may choose from a trio of meat choices, including Traditional Spanish Pork Trotters, Almond Cream and Arugula Sauce, Lamb Burger Stuffed with melting Goat Cheese, Eggplant and ultra-thin Green Crispy Potato Chip, or Stewed Beef Cheek served with Red Fruit and Daikon Ravioli. The Michelin-inspired experience closes with a scrumptious Lemon Cream topped with Curry foam and Lemon Sherbet, Crispy Coconut and Crumble Dessert.
Occupying 2,000 sq ft, Rustico serves authentic Spanish tapas in a relaxed and elegant setting that is distinctly modern with covert Spanish accents. Seating 80, it features an al fresco terrace where diners can enjoy the art of people watching, like a true Spaniard; or enjoy the rustic brick arch interiors modelled after typical Catalan restaurants. An open kitchen allows diners to interact with the kitchen and observe Chef Carlos Salvador Asensio’s crafting skills.
