Chef Billy Cheong brings Hong Kong's traditional roast goose to Lung Hin, Marco Polo Ortigas Manila

With Marco Polo Ortigas Manila's authentic Cantonese restaurant, Lung Hin, the oceans between Guangdong Province, China and Manila are crossed with ease. The bridge between them? As Manila's appetite for international culinary delights grows, chef Billy comes to this perpetually hungry city and hopes to satisfy it with his famous roasted goose recipe. This recipe begins with a goose that's marinated for hours on end in a charcoal furnace at high temperatures, all of which are needed to create a well-roasted goose's crispy skin and divinely tender and flavourful flesh. Everything else that goes into preparing the dish are, of course, top secret. 
With every bite, diners will experience Chef Billy's 40 years of experience in the hospitality and culinary industry, as well as his family heritage anchored on Chinese culinary expertise. (His grandfather founded Macau’s Lin Heung Chinese Bakery, while his aunt, Cheong Lai Mui, was the designated chief chef of Republic of China’s first president’s wife). 
The Macau-born chef has also been awarded the Commanderie De Cordens Bleus De France by Chainese des Rotisseurs in 2001, recognized by the China Hotel Awards in 2013, pioneered the introduction of Michelin-starred restaurant, Kam’s Roast Goose’s, to the Star Cruises in 2014, and has contributed to the successes of ther Hong Kong restaurants like Crystal Jade, Ye Shanghai, and Tim Ho Wan.
