Lots of lettuce for a dinner with friends on a lucky Friday



On Friday night, I was at the supermarket, buying last-minute ingredients for a dinner at home for six friends, living a #Travelife.

Just as I was navigating the vegetable corner, who should I bump into but a very nice lady who I've traveled with twice, along with a group of friends, somewhere in this wonderful world.

She said: "I was just thinking of you. I was wondering if you'd like some lettuce."

THE BIGGEST LETTUCE I'VE EVER SEEN

Apparently she had lots of lettuce to give around, and she was sending them to all her friends. Of course I wanted some lettuce, especially as I had six people coming over for dinner in an hour.

She gave me four kilos of the biggest lettuce I had ever seen -- one leaf was enough to make a wraparound skirt.

And with a bit of inspiration, I chopped some up and added it as an ingredient to my Philippine salad buffet.

This is becoming a very popular staple for my casual dinners, particularly among my friends, by the way. It's so simple to do and everyone enjoys it, living a #Travelife.

MY PHILIPPINE SALAD


A combination of green mangoes and Indian mangoes
Native tomatoes
Cucumbers
Salted egg
Crispy pork cracklings
Lettuce

Chop everything up and serve this shrimp paste sautéed in coconut oil.
