The first dish that comes to mind when people think of British food is probably the world-renowned fish and chips -- which happens to be a great personal favorite of mine, when it is done very well.
However, apart from this iconic culinary dish, there are many undiscovered British specialties largely unknown and untried in this part of the world.

It is for this very reason that the Dusit Thani Manila has invited renowned celebrity British chef Derek Quelch to host a week-long “Great British Food campaign.”
For this one week, Chef Derek will take diners on a bold, gastronomic journey to introduce some of those more traditional British specialties to the local dining market.
ABOUT CHEF DEREK
Chef Derek started his culinary journey at Flounders Restaurant in London.
His experience has since included stints at world famous hotels such as The Grosvenor House, Savoy Hotel, and Claridge’s.
He has also spent time in France, Switzerland, and Germany.
His most recent role was as executive chef of The Goring Hotel in London, where he gained fame among Britain’s elite.

ROYAL WEDDING OF THE YEAR
During his stint here, he served members of the British Royal Family.
The Goring Hotel was also where the Middleton family was billeted for the Royal Wedding, so their meals at the hotel were all under his guidance.
The hotel was subsequently awarded a Royal Warrant by Her Majesty, The Queen of England.

A LIP-SMACKING MENU
Chef Derek will be taking over the Dusit Thani's Tosca restaurant from January 14 to 17, and showcasing his British style and expertise.
He'll be creating dishes not readily found on menus in Southeast Asia, including poached fillet of halibut with mussels, clams and shellfish sauce, slow roast pork belly and classic British desserts such as homemade rice pudding with plum and cinnamon jam.
He is also serving his award-winning milk chocolate and Earl Grey mousse.
