What a Shakespearean dinner was like at the Makati Shangri-la on Saturday night



Last Saturday, in Manila living a Travelife, I attended the 41st grand dinner of the Chaine des Rotisseurs in Manila.

This year's grand dinner was a black-tie affair. It was organized by the Chaine together with Makati Shangri-la, and GM Reto Klauser and his executive chef personally oversaw the event.

The theme for this year was Shakespeare.

I was really curious as to how they would be able to put together such a meal with such a theme.

This was what the Shakespearean-themed dinner was like last Saturday:

CANAPES
Fine de Claire oyster with a choice of:
white balsamic and mango chutney, lemon
or lime coriander and roma tomatoes

Tuna tataki with light mustard sauce
Crab meat on crisp
Beetroot and sour cream

Champagne Lhuillier Brut NV
Prosecco Spumante, NV


STARTER 1



Smoked eel with horseradish cream, 
trout with lemon cream and smoked salmon with a shaved apple fennel salad

accompanied by
Chablis 1er Cru "Les Ammonites" 2008

Pan-seared scallops, barley and root vegetables
with double-boiled herb tea

STARTER 2



Stewed prunes, foie gras and onion confit
cooked in a jar with star anise

accompanied by
Gewurtzraminer Vendage Tardive 2008

Hibiscus gelee with port wine granite

*    *    *

MEAT



Slow-cooked darling down beef medallion
with ale, thyme gnocchi, creamed kale and white asparagus

accompanied by
Chateau Chasse-Spleen 2008

CHEESE



Hazelnut-crusted goat cheese
with walnut biscotti and quince jam

accompanied by
Sauternes 2009

DESSERT



A cauldron of strawberry stew
and cannoli filled with saffron ice cream
